On-demand courses for busy bakers on durum, sourdough and stone milling

Would you like to know more about durum wheat, sourdough or stone milling? The Northern Crops Institute is offering three new on-demand courses for bakeries of all sizes that allow bakers to learn at their own pace.

Developing Innovations With Durum: More Than Just Pasta
This course provides participants with the knowledge on how durum can be beneficial in other facets than just pasta. Instructors will touch on many unique traits of durum, nutrition components, an overview on procession as well as sourcing the material.

Participants of the course will watch lectures from milling experts, understand how to use durum and know exactly where they can buy durum flour for cooking and baking.

This course is beneficial for major food corporations and manufacturers as they will be able to understand how this ingredient can be beneficial to include in their products; bakeries, as they will understand how this ingredient can give their baked good a boost in colour and flavour; and artisan bakers who will understand how this ingredient can give them an edge and separate them from the competition. This course is also beneficial for millers, wheat breeders and farmers.

Sourdough Baking
This course will touch on the many benefits of baking Sourdough bread and will leave participants with all of the basic knowledge of making sourdough.

At the end of this course, participants will know what real sourdough bread tastes like.

This course is beneficial for professionals within the cereal science industry, small-scale bakery startups and flour millers.

Stone Milling Basics
This course will provide participants with a basic understanding on how to use a stone mill and properly maintain it. The stone milling course will touch on the history, principles, components and economics of stone milling. Participants will be able to view short lectures, watch demonstrations and gain an overall understanding on the many benefits of stone milling.

  • The basic principles of milling
  • The mechanics/components of stone milling
  • The economics of stone milling

This course is beneficial for local bakers, millers, manufacturers, local food organizations, organic/sustainable ag farm networks, home bakers, and specialty millers.
