A pizza mix that takes the heat

Ardent Mills developed its new Primo Mulino Neapolitan-Style Pizza Mix for making authentic, thin pizza crusts in the tradition of Naples, Italy, where the famous pizza is hand-tossed and baked quickly in extremely high-heat gas or wood-burning ovens.

The mix is made with a blend of select Canadian prairie wheat varieties and other functional ingredients so all you need to add is water and yeast, said Elaine O’Doherty, Ardent Mills’ marketing manager, in a press release. It delivers a supple dough that bakes into a crust with a crisp exterior and delicate bite. In addition, it performs well with long fermentation and simple hand tossing.
