Dean Litster presents his winning pizza, The Dean Martin, to judges at the Canadian Pizza Summit in 2018.

Dean Litster, Canadian Pizza‘s 2019 Chef of the Year (Open), will teach a class on how to make Detroit-style deep-dish pizza for Faema Culinary Academy.

Litster, also known as @professorzaa, is chef and partner at Armando’s Pizza Bar and corporate pizza chef with Armando’s Pizza Inc. in Windsor, Ont. He is known for his signature Windsor-style pizza.

In addition to carrying the title of Chef of the Year in 2019, Litster placed fourth in the Pan division of the International Pizza Challenge in Las Vegas in March and won the Mystery Ingredient Challenge at the Canadian Pizza Summit in October.

For the session, Litster will explain the theory behind the airy, crispy classic American dough he has spent years perfecting. Students will try their hand at mixing, kneading, stretching and dressing the pizza. The goal is to help participants learn to work with ingredients to create their own ideal pizza.
