White Toque’s frozen flavour pearls

flavour_pearlsMarch 30, 2011 – A variety of Flavour Pearls Frozen Creative Food are now available from White Toque.

These small, frozen balls of alginate contain a soft of liquid heart of either fruit pulps or savoury flavours. Even after thawing, Flavour Pearls stay perfectly round. They are designed not to burst until in the mouth, revealing their soft or liquid heart.

Sweet pearls are available in mango, blood orange, lemon, Curacao, raspberry, passion fruit, and lime. Savoury wasabi, balsamic vinegar, soy sauce and truffle flavour pearls are also available. The pearls have a shelf-life of 12 months and can be used in preparations or displayed as decorations in a variety of applications, including baking, catering, cookery, ice cream, or cocktails.

Flavour Pearls recently won the Innovation Award in the Food Products category at the SIRHA show in Lyon, France.
