Tottenham, Ont. – A young Tottenham entrepreneur has his sights on cornering the local cheesecake market, and maybe a larger market share if things go well – and they probably will.

Domenic Sperduti recently graduated from the Humber College Culinary Skills program where he honed his skills professionally in the kitchen.

He experimented with a variety of baking, but began perfecting his cheesecakes and decided to turn it into a business.

“I may incorporate more desserts as I go on, but right now it’s cheesecakes,” Domenic said of starting out after graduating. “There’s not a lot of places where you can find them. At the grocery store they’re all basically from the factory. These aren’t your regular cheesecakes – they are specialty cakes.”

He offers Lotus Biscoff Cookie Butter, Nutella Ferrero Rocher, Kinder Bueno, and Plain Jane New York, to name a few of his creations. Domenic said he was exposed to the kitchen from a young age.

“I come from an Italian background, my parents were both born in Italy. I grew up watching my grandmother, my mom, and my dad. They’re always in the kitchen cooking something. This is a passion I’ve always had. I tried to move into other trades, but it just wasn’t for me – I decide to take on cooking and baking.”

For now, Domenic is baking out of his home, but as sales increase, he thinks he will have to move to a more industrial type kitchen just for the room.

Over Christmas he had an increase in orders as people want something special for holiday dinners.

For his business name he chose, Cucina Dolce è Morbida, which translates to English as Soft Sweet Cuisine.

As his business grows, Domenic hopes to eventually open his own restaurant or bakery. You can visit and learn about what cheesecakes are available and how to order by visiting Instagram @cucina.dolce.e.morbida.
