Technomic suggests fall flavours and ingredient ideas

Technomic’s recently published Season’s Eatings report highlights fall flavours and ingredients and recommends actions for how restaurants, bakery-cafés and food-service locations can use them in the upcoming fall season.

For example, operators can offer up squash jam for a unique seasonal spread for breads and other baked goods.

Technomic suggests condiment infusions: Add fall ingredients to dressings, sauces and other condiments, including date syrup and squash jam, for fun seasonal twists.

Consider incorporating fall ingredients such as pumpkin into existing menu items — such as ravioli or risotto — for fresh takes on menu favourites.

Another approach is to add fall produce to non-traditional dishes, for example, adding mushrooms to hamburger patties and apple to soups. This, the research company suggests, can add a boost of nutrition, texture and flavour.
