Traditional Irish Soda Bread

Yield: 30 x 500 g loaves

Method

Combine the flour and baking soda. Rub in the butter. Pour in the buttermilk (or plain yogurt and milk) to form a soft dough. Shape the loaves and put onto greased pans. Soda bread is traditionally made into rounds.

Bake at 205 C (401 F) for 45 to 55 minutes.

*Instead of buttermilk you can use a 50/50 mixture of plain yogurt and milk. Source: This recipe is courtesy of the Baking Industry Association of New Zealand’s Slice magazine. www.bianz.co.nz
