Protein alternative derived from Shiitake mushrooms

Colorado – MycoTechnology, based in Colorado, has developed a food processing technique using the fibrous roots of Shiitake mushrooms to produce an alternative protein, being called PureTaste. The powder contains 79 per cent protein by dry weight, reports Food Navigator. | READ MORE
