Madison, WI –Indulgence is still a factor in consumer purchases despite greater interest in healthier offerings, suggests new research from the International Dairy Deli Bakery Association (IDDBA).

The International Dairy Deli Bakery Association’s annual trend report What’s In Store 2018 found more health-conscious shoppers are searching for “clean-label” but quick indulgences aren’t forgotten in bakery purchases.

“Shoppers want tasty products and to feel good about choosing that product,” Eric Richard, IDDBA’s education co-ordinator said in a press release.

Other highlights in the “Bakery Sales and Retail Trends” chapter include an increase in consumer demand for simplicity and recognizable ingredients.

“Consumers’ interest in fresh products and simple, natural ingredients, in-store bakeries have tremendous opportunities to connect with shoppers with their freshly baked offerings,” Richard said.

Additionally more consumers are looking for single-serve and grab-and-go dining options as well as smaller-sized varieties of baked goods which bakeries can take advantage of.

What’s In Store 2018 is an annual resource published by IDDBA providing information on changes and trends shaping the dairy, deli, bakery, cheese and supermarket foodservice industries.
