October 3, 2011, Toronto – The Canadian Pastry Chefs Guild held their fall meeting at Pâtisserie La Cigogne in Toronto.

Thierry Schmitt, owner and artist behind Pâtisserie La Cigogne, demonstrated building croquembouches for the Guild in his very new second location on Danforth Ave. in Toronto’s east end. He opened his first location in 2003. Schmitt is a French master pastry chef with over 30 years of experience.

The Sept. 21 meeting also held a moment of silence in honour of Hermann Ackerman, who died on June 25. Hermann was a founding member of the Guild, active organizer of social events and a dedicated member for many years.
