With their sights set on the Gold Medal at the upcoming Louis Lesaffre Cup in Las Vegas in September, Baking Team Canada will be among the Western Hemisphere teams competing for one of two spots in the next Coupe du Monde de la Boulangerie (Bakery World Cup)
 in 2012.

Two competitors are returning from the previous team: Tracey Muzzolini of Christie’s Mayfair Bakery and Bill Clay of Bodhi’s Bakery. They’re joined by new member Tanya Heck of Urban Baker. Muzzolini will be representing Canada in the Bread Category, Clay will be competing in the Artistic Piece Category, and Heck will try her hand in the Viennese Pastry Category.

Under the guidance of coaches Volker Baumann and Clayton Folkers and team manager Alan Dumonceaux, the team will spend countless hours practising in preparation for the competition.

New to Baking Team Canada this year are a redesigned brand and website. Team members and Canada’s baking community will be able to use the site as a resource, and it will be a venue for recognizing and honouring the team’s supporters and sponsors.

Baking Team Canada is an excellent opportunity to promote the baking trade to young bakers, future bakers and the general public, but financial support is essential to its success. Individual bakers, bakery owners, allied trades and suppliers are all welcome to support Baking Team Canada financially. Financial support is required for ingredients, accommodations, airfare and other travel costs, as members of the team are volunteering their time and resources to promote Canada in the global baking community.

Cheques payable to Baking Team Canada can be mailed to: Baking Team Canada, c/o Alan Dumonceaux, 11762-105 Street NW, Edmonton, AB T5G 2R1. / BJ
