Bran muffin mix | 4.5 | — |
Cold water | 1.5 | — |
Large eggs (5) | — | — |
Sliced bananas (3 cups) | — | — |
Molasses (optional) (1 cup) | — | — |
Method: Mix ingredients together until blended. Fill
paper-lined muffin tins using levelled #10 scoop. Garnish each muffin with
semi-submerged sliced banana. Bake in convection oven at 325 F for 25 minutes.
Yield: 36 3.75-ounce muffins.
