June 17, 2011, Sturtevant, WI – Benelact can reduce cholesterol while
preserving taste, functionality and nutrients in milk products, the
company says.

The Benelact technology, developed by Alliance Enterprises, isolates and
extracts cholesterol using traditional dairy equipment. It can be used
to produce a variety of full-fat, reduced-fat and fat-free cheeses, such
as cheddar, mozzarella, Colby, and queso blanco, without adding
chemicals, plant sterols or preservatives to products.

“Processors, retailers and foodservice companies can deliver the
heart-healthy cheeses consumers want without sacrificing flavour and
functionality,” said Brandon Malacara, Benelact marketing director.

Alliance Enterprises reports Benelact can remove up to 90 per cent of the cholesterol from milk.
