Barry Callebaut publishes Volume II of Ruby Encyclopedia

Montreal – The Chocolate Academy North America has released Volume II of Ruby Encyclopedia. Volume I, released in 2021, focuses on confections, baking goods and desserts. The new 100-page volume covers ice cream and beverages that use the popular Ruby chocolate.

Ruby Encyclopedia is a resource and tool to help chefs explore and dive deeper into the possibilities of Ruby chocolate. Volume II presents six chapters and 46 innovative recipes that showcase unlimited combinations of flavours, textures and colours. Recipes include Ruby Stracciatella Gelato, Ruby Gold Coffee Gelato, Raspberry Ruby Crème Glacée, Coconut Acai Milkshake and Ruby Pistachio Ice Cream.
