Barry Callebaut launches chocolate that puts ‘cocoa first, sugar last’
October 28, 2022 By Bakers Journal
Barry Callebaut is introducing a range of dark and milk chocolates that it says contain 50 per cent less sugar than the most consumed chocolate across the world.
Calling it the second generation of chocolate, Barry Callebaut has redesigned the chocolate-making process in order to address changing consumer preferences.
Its Cocoa Cultivation & Craft principle (CCC) recognizes the special qualities of each cocoa bean and reveal their nuances of flavour.
The idea is to put “cocoa first, sugar last.”
