SAIT hosts classical pastry event

Sixteen students attended a two-day SAIT workshop on classical viennoiserie. SAIT

Calgary – SAIT Polytechnic brought together students and instructors from across western Canada for a two-day workshop focused on traditional viennoiserie, shared Clark Adams, instructor with the college’s baking and pastry arts program.

The program, titled “Kickin’ It Old School: Bringing Back Classic Viennoiserie”, was held at the college’s campus in Calgary from Nov. 14-15. Although the program was retro-inspired, it blended old techniques with new flavours for products like farmer’s sausage rolls and croissants. The class was open to all skill levels, but it was recommended one be familiar with baker’s percentage. Sixteen people attended, including instructors and students from SAIT, NAIT and Vancouver Community College.

The two-day class was instructed by Tracey Muzzolini. She is a former Team Canada member and silver medalist at the 2007 Louis Lesaffre Cup.
